Harvest and vinification:
Manual harvest. Destemming and cold maceration.
Gentle pressing.
Aging on the lees for 6 months.
Cold stabilized, clarified, and gently filtered before bottling.
Tasting:
Pale yellow with greenish reflections. Clean and bright. Complex aromas. Notes of white fruit (apple, pear, pineapple) with a spicy background (fennel). With light notes of peach and honey from the Pedro Ximénez variety. Broad entry, shows great subtlety on the palate, with creamy and fruity notes, with a fruity finish.
Pairings:
Due to its structure and acidity, creamy and cured cheeses, white fish, shellfish, and fatty white meats (Iberian pork shoulder), will pair perfectly by contrasting textures.

It is said that a Catholic cardinal, a long time ago, brought this grape to the lands of Málaga. Over time, and with the skill of the farmers who shaped it, we have absolute respect for its origin. With this respect, we move to Terra Alta. The thermal contrast, poor soils, and great patience give rise to a unique grape. The careful winemaking, which allows for its scarce production, is key to achieving excellence in intensity. It speaks to us of subtlety, with a loud and confident voice, the one that, during the waltz in the glass, grants us powers, tickets to travel with our eyes closed, through the sandy fields that saw it grow, through the aromas of dry grass, fennel, and rosemary that perfume our minds, through the green paintings of Matisse, which are now fragrant, alive, and three-dimensional.

Aromas of fennel and rosemary, memories of dry earth and chlorophyll greens, honey, and stone fruit.
