TASTING NOTE:
Its intense straw color speaks of an aged wine, in this case on fine lees. 6 months of battonage in stainless steel give it density and velvet to make it last sweet in the mouth, to become bitter at the end of the finish, making even clearer the mixture of a versatile dry wine, shamelessly gastronomic.
On the nose, we find notes of candied apricots, perfumed with local citrus fruits, which we combine perfectly with a light enamel bath while we discover that we left the door open to the cheese fridge.
In the mouth, it maintains a discreet but determined tension. It is intense and long, filling every space with a single drop.
Tasting the passage of time on white wines is a pleasure. The pause, the tranquility with which they make us wiser, seems contagious, the noble evolution of this wine is transmitted and alters the passage of time of those who hold the glass.
