Red wine aged
Cariñena, Garnacha, and Syrah
Aged for fifteen months in French oak barrels.
Medium-density dark color, with copper flashes that surf wildly in the glass, like a lion wanting to break free from its cage.
The nose is taken over by noble, clean, and old wood, a bit of blood, black fruit, ripe black fruit, sweet and tender, mingled with the incense of the Botafumeiro from Santiago de Compostela.
On the palate, it is friendlier than expected, intense and clear within the darkness, the mature tannins of its well-aged character speak of meat, making our mouths water… Its medium finish proclaims the breadth of gastronomic polyamory, and the sensitivity of the earth when it knows it’s being listened to. It flees and adapts to our palate like lingerie on the skin of a beloved.
